2 Ingredient Banana Pancakes

Yes, you read that right.

Ingredients:

  • 1 ripe banana

  • 2 large eggs, lightly beaten

  • Butter or oil, for cooking (optional)

  • Baking powder (optional)

  • 1 tsp Vanilla extract (optional)

  • Toppings: Maple syrup, jam, powdered sugar, fruit, or any others you like!

Instructions:

  1. Peel the banana and break it up into several big chunks in a medium bowl. Use a fork to thoroughly mash the banana until there are no big chunks.

  2. Add vanilla if desired. You can add 1/8 tsp of baking powder if you want fluffier pancakes!

  3. Stir in the beaten eggs until fully combined with the mashed banana.

  4. Heat a pan over medium heat and melt a little butter or warm some vegetable oil in the pan if desired.

  5. Drop the batter into the pan (you should hear a sizzle).

  6. Cook for 1 minute and then flip (If you want to add blueberries or other toppings, you can sprinkle them on before you flip).

  7. Cook until golden brown on both sides.

  8. Continue cooking the pancakes. Transfer the cooked pancakes to a serving plate and cook the rest of the batter.

  9. Serve warm with your favorite toppings- our personal favorite is maple syrup!
