Breakfast Egg Tacos

For those days you want to spice up your scrambled eggs. There isn’t much to this recipe. No set measurements or spices- feel free to add or takeaway however you like!

Ingredients:

  • 2 eggs

  • Bell Pepper

  • Salt

  • Pepper

  • Onion

  • Tortillas (Corn or Flour)

  • Sriracha

  • Mexican Blend Cheese

  • Garlic Powder

  • Olive Oil

  • Butter

Instructions:

  1. Prep: Slice onion and bell pepper. Beat eggs with salt and pepper to taste- set aside.

  2. Cook Veggies: In a skillet on medium heat, add olive oil and sliced veggies with a pinch of salt, pepper, and garlic powder. Cook for about 5 minutes or until vegetables are tender. Set aside.

  3. Cook Eggs: Warm pan on medium heat. Add Butter. Once butter is melted, add eggs and a pinch of garlic powder. Scramble.

  4. Warm tortillas: Place a skillet on high heat and cook each tortilla for about 2 minutes on each side.

  5. Assemble Taco: Place veggies and eggs on the tortilla. Sprinkle some cheese and sriracha to taste and enjoy!
