Chocolate Chip Banana Bread Bites

Got overripe bananas laying around? Craving some dessert but don’t have too much time on your hands? This is just the recipe for you!

 Ingredients

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 2 large overripe bananas

  • 1/3 cup melted butter

  • 2 large eggs

  • 1 cup white granulated sugar

  • 1/2 tsp cinnamon powder

  • 1 tsp vanilla extract

  • Chocolate chips (As much as you like! You can substitute chocolate chips with your choice of nuts)

Instructions

  1. Heat your oven to 350°F. Grease a 9-inch square cake pan with nonstick cooking spray and set aside. (If you don't have this size, you can always use aluminum foil to customize the size)

  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.

  3. In a large bowl, mash the ripe bananas with a fork. Add the melted butter and stir until combined. Stir in the sugar, eggs, and vanilla extract. Stir until smooth.

  4. Fold in chocolate chips.

  5. Stir the dry ingredients into the wet ingredients. Don’t over-mix! If you over-mix, the bread bites will end up heavy.

  6. Pour batter into prepared pan. Bake for 23 minutes, or until a toothpick inserted into the center of the bread comes out clean.

  7. Remove the pan from the oven and set on a wire cooling rack. Let the bread cool in the pan for a few minutes. Run a knife around the edges of the bread and slice into squares.

  8. Enjoy alone or with a serving of vanilla ice cream!
