Garlic Butter Baked Salmon with Brown Rice and Asparagus

A well-balanced meal!

Ingredients

  • 1 fillet salmon

  • 2 tbs lemon juice

  • 2 tbs cold butter, cubed

  • 2 cloves garlic, minced

  • ½ teaspoon salt

  • ¼ tsp red pepper flakes

  • ¼ tsp black pepper

  • Seasoning of your choice- we like the Trader Joe's 21 Seasoning Salute

  • Asparagus (amount to your liking)

  • Brown Rice (amount to your liking)

Instructions

  1. Defrost salmon fillet and cut into appropriate slices.

  2. Preheat the oven to 375ºF.

  3. In a saucepan over medium heat, combine the lemon juice and minced garlic and let lemon juice reduce.

  4. Add cubes of butter and swirl until butter is fully melted.

  5. When butter is completely melted, add your preferred seasoning, red pepper flakes, salt and pepper.

  6. Place the salmon filet in a piece of foil large enough to fold over and seal- make sure there is enough to add the asparagus too.

  7. Using a brush or spoon, brush the salmon with the garlic butter sauce.

  8. Place salmon in the foil and add asparagus.

  9. Pour leftover sauce over the asparagus.

  10. Cover with foil ensuring that all sides are properly closed so the sauce does not leak.

  11. Bake the salmon for 12-14 minutes or until mostly firm. Open the foil and allow the fish to broil under the broiler for 2-3 minutes. Make sure the fish doesn’t burn!

  12. Serve straight out of the oven over a serving of brown rice.
